Zucchini Stuffing
Ingredients:
- 1 package (6 oz) Stove Top stuffing mix (Turkey or Chicken flavor recommended)
- 3/4 cup butter, melted
- 3 cups diced zucchini
- 1 medium carrot, shredded
- 1/2 cup chopped onion
- 1/2 cup sour cream
- 1 can (10.75 oz) condensed cream of chicken soup (undiluted)
- 2-quart baking dish
- Large bowl
- Rubber spatula or wooden spoon
Directions:
- Preheat oven to 350°F.
- Grease a 2-quart baking dish with nonstick cooking spray; set aside.
- In a large bowl, combine stuffing mix and melted butter.
- Set aside 1/2 cup of this stuffing mixture for topping.
- For the remaining mixture in the bowl, mix in the zucchini, carrot, onion, sour cream, and soup.
- Put the complete mixture into the greased baking dish.
- Sprinkle with reserved stuffing mixture as topping.
- Bake uncovered for 40-45 minutes, or until golden brown and bubbly.
