Plum Duff
Ingredients
- 2 cups cut-up pitted prunes (Ivy buys dried prunes)
- 2 eggs
- 1 cup brown sugar
- ½ cup shortening or softened butter (OG called for shortening, Ivy uses softened butter)
- 1 cup sifted flour
- ½ tsp salt
- 1 tsp soda
Directions
1. Prepare prunes
- In pan on stove, add prunes and a bit of water to soften.
- Cover and bring to a simmer.
- Cool and drain water.
- Food process to mix up to smooth texture
2. Wet ingredients
- In large bowl, Beat 2 eggs
- Blend in 1 cup brown sugar, ½ cup softened butter (or shortening), and prunes
3. Dry ingredients
- Sift together 1 cup sifted flour, ½ tsp salt, and 1 tsp soda
4. Combine & cook
- Slowly add dry ingredients to wet ingredients
- Pour into well greased 1 quart mold.
- Steam. Time: 1 hour (Check at 30 to 40 minutes, should be firm, but not to firm. When edges are pulling from pan and tester comes out clean is a good thing to look for. Can pull of element and keep covered to finish steaming if close). Ivy uses stock pot w/steamer to steam.
